Cinnamon Rolls

There's a tiny cute cafe in a small village near me called Rickmansworth, if any of you reading are near you have to visit it's called Cinammon Square, and they bake the best, award winning Cinammon Squares! The rolls are sweet, soft, cinammony and baked to perfection covered in the thickest layer of cream cheese icing!

They appear in my dreams, they are melt in your mouth pure heaven. However, its 30 minutes away and being at university the opportunity to have one has decreased :-(.

So the sweet, succulant taste has stayed with me since my last visit and I've whipped up my own little recipe to make a batch.

I'm no pro chef, so it's dead easy, takes less than an hour and is sure to make anyone who has a bite fall in love with your cooking! and you!

So split into three sections...
The dough:
2 cups of plain flour 
4 teaspoons of baking power
Half a cup of sugar
Teaspoon of salt
3 tablespoons of butter - spoonfull just over the brim
¾ cup of milk
The filling:
4 tablespoons of butter
2-3 cups of brown sugar
3 teaspoons of cinnamon
Raisins are optional!
The icing:
8 tablespoons of cream cheese (I used light)
8 tables spoons of butter (light can be used)
2 cups of powerdered sugar
Tablespoon of vanilla essence

Also you will need some kind of tray, I used a cake dish, but any can be used!

1. Preheat over to 200C 
2. Mix together flour, sugar, baking powder, and salt. Cut the butter into cubes and put it in, wash your mits and stick your hands in! untill the butter is mixed in.
3. Slowly pour your milk in until you have a doughy, but not sticky ball. 
4. Now for the filling, mix together all the butter, brown sugar and cinnamon until you have a crumbly but soft mixture.
5. Spread about 1/4 of the filling mixture onto the base of your tray.
6.Roll out your dough onto a lightly floured surface until it is around 1cm thick and in the shape of a rectangle, then spread your remaining mixture right to the corners and add the raisins if you wish! Chocolate or something naughty could be added too!
7. Roll up the rectangle and cut into around 8 small rolls, when cut push the rolls down with the palm of your hand to spread them. 
8. Place the rolls into your dish and place in the oven for 20-25 minutes!

Now for the icing, which I always make extra as I leave a thick layer on the bowl at the end on purpose just so I can lick it all up!
9. Mix your butter and cream cheese together and slowly add in your icing sugar, stir until all the little lumps are gone! (I always give this boring job to any man whose unfortunate enough to be in the house at the time)
10. Place it in the fridge!
11. When ready leave to cool!! Don't put the icing on until fully cooled!!! and TA DA!!
They are perfect for occassions, tea, breakfast and last a few days so if your feeling rebelious smack the icing on (like me), but otherwise a clean sheet of thin icing is sure to give you a sugar kick to start your day!

They also do other naughty little treats, and savoury nibbles too! It's only a tiny little cafe (you even have to duck to get inside as the door is so incy) but well worth the visit!!
