Skinny Rice Recipe


For years I have watched my mum go on countless diets. One week the house would only contain protein, the cupboards stripped of anything that contained even 1gram of sugar and she'd follow the diet like the bible. The next week she would have returned to her love affair with chocolate.

As you all have probably seen photos of my beautiful mum, she definitely does not need to diet.

But I do have to thank her for teaching me many healthy recipes.

So this is a little trick, a huge portion of rice normally containing 400 calories to only containing 50 calories.

Meet the man of the hour.  In the spotlight,


Mr Cauliflower.



This little veggie can be grated, processed or chopped finely into the perfect rice substitute.

I chopped mine as I like the rice slightly bigger.


Once your cauliflower is at the size you like it place it into a microwavable bowl, cover it in cling film and microwave it for 5 minutes or until soft.


Season your cauliflower rice with butter, salt and pepper and you'd be shocked at how you can't tell a difference!


I had mine with a huge serving of chilli con carne, which was actually my first ever kitchen experiment. Brown your mince and place it in a pan with chopped onions, red peppers, kidney beans, one crushed garlic clove and a small tin of chopped tomatoes. For seasoning I use paprika, salt, pepper, cumin, one beef stock cube, a splash of balsamic vinegar and a tiny bit of cinnamon and it is so good! Leave it to simmer for 10 minutes.


This whole portion is around 300calories and it is wheat and gluten free, very low in carbs and high in fibre. You really can't taste the cauliflower especially with some seasoning and my scrumptious con carne.
